My guest, Jacq Davis, master gardener and chef, makes Sugarcane Chicken Kabobs in the first part of a series of videos during Jacq’s recent visit. She selected a recipe to utilize the sugarcane I had just harvested in the garden. I hope you enjoy this mouthwatering recipe.

Sugarcane Chicken Kabobs

Sugarcane Chicken Kabobs with Red Cabbage Salad

~ Ingredients ~

16 slices sugarcane

2 lbs ground chicken

1 cup bread crumbs

2 garlic cloves

1 tsp minced ginger

3 tbl brown coconut sugar

3 tbl soy sauce

2 tbl pineapple or passion fruit juice

1 tbl rice wine

salt and pepper

~ Directions ~

Prepare sugarcane skewers and set aside. (See video here.) Mix all remaining ingredients together thoroughly. Form a handful of chicken mixture around each skewer. Lay in a hot pan, griddle or grill. Cook thoroughly on both sides. Makes 16 kabobs. Serve with fresh salad of chopped red cabbage, red bell pepper, tomato, grated carrot, passion fruit, if available, and hot pepper, if desired. Make a simple dressing of olive oil, apple cider vinegar, soy sauce, a little sugar, and sesame oil.  Enjoy!
