Ingredients

  • 5 cups one-day-old cooked rice
  • 3 tablespoons shoyu (soy sauce)
  • 3-4 tablespoons oyster sauce
  • 6 eggs
  • 1 teaspoon garlic salt
  • Butter (for sautéing)
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 package Oscar Mayer maple bacon, diced
  • 2 packages Mo’Ono Sweet Portuguese sausage, sliced
  • 1.5 cups frozen mixed vegetables

Instructions

  1. Prep your ingredients: Before you start cooking, make sure all your ingredients are prepped and ready to go. Dice the onion, mince the garlic, slice the Portuguese sausage, and chop the maple bacon.
  2. Sauté the aromatics: In a large skillet, melt some butter over medium heat. Add the diced onion and minced garlic, sautéing until the onion becomes translucent and fragrant.
  3. Fry the bacon: Fry the diced maple bacon until crispy. Remove and drain on paper towels. Save some bacon oil on the side
  4. Cook the Portuguese sausage: In the same skillet as the bacon, add the sliced Portuguese sausage. Cook until browned and slightly crispy, about 5 minutes.
  5. Cook the eggs: In a separate pan, drizzle some bacon oil and scramble the eggs. Then season it with garlic salt for taste. Cook them until they’re just set, then remove from heat and set aside.
  6. Combine the rice: In a large, clean pan, melt a little more butter over medium-high heat. Add the day-old cooked rice, breaking up any clumps. Stir in the shoyu and oyster sauce, mixing well to ensure all the rice is coated.
  7. Mix everything together: Add the sautéed onions, garlic, scrambled eggs, crispy bacon, and cooked Portuguese sausage to the rice. Gently fold everything together until well combined.
  8. Add the vegetables: Finally, stir in the frozen mixed vegetables and cook for an additional 2-3 minutes, until heated through.
  9. Serve: Taste and adjust seasoning if necessary. Serve hot, garnished with green onions or sesame seeds if desired.

Tips for the Best Fried Rice

  • Use day-old rice: Using rice that has been cooked and refrigerated helps to keep it from getting mushy.
  • Cook ingredients separately: Cooking the ingredients separately allows for better control over the texture and flavor of each component.
  • Customize it: Feel free to add other ingredients like bell peppers, pineapple, or different proteins to make it your own.
